Cheese produced in Peru wins gold medal in Brazil | News

The semi-ripened Swiss cheese from the Association of Small Agricultural Producers Perla del Paraíso de Otuzco, La Libertad, obtained the Gold Medal in the International Contest “Expo Queijo 2021”, held in Brazil.

The aforementioned contest had the participation of the best samples from Canada, the United States, Italy, Portugal, Switzerland and the 16 states of the host country.

To produce this cheese, it was necessary to use 250 liters of milk, and it had a maturation time of 2 and a half months.

This product, which stood out before cheeses from Switzerland, Canada, Brazil and other countries, was produced in the dairy derivatives processing plant, which the association co-financed through an Agroideas Business Plan of the Ministry of Agrarian Development and Irrigation (Midagri), located in the district of Agallpampa, in Otuzco.

Abel Luis Cueva is the president of the organization and a cheese master. The plant work starts every day at 5 in the morning, and allows them to make more than 10 types of cheese: fresh, gruyere, pariah type and Swiss type, buttery, mozzarella, among others, in addition to natural and fruity yogurts.

These products are marketed under the brand name “Perla del Paraíso” in Otuzco and Trujillo.

The Association of Small Agricultural Producers Perla del Paraíso, is made up of 24 livestock families, and since 2019 they decided to change their artisan work for the industrial scheme with the support of Agroideas, in order to raise the production standards of their cheeses, fruity yogurts , white delicacy and butter.

This project involved a total investment of 488,683 soles, of which 390,946 soles was the contribution of Agroideas and 97,736 soles was the counterpart financed by the agrarian organization for the construction of the plant.

In addition, machinery was installed such as a cauldron, an air compressor, a 1,000-liter cold tank, a circular cheese tub and a pre-pressing tub, a milk skimmer, a butter mixer, a 200-liter yogurt maker, an al vacuum and inputs.

The adoption of technology will allow farmers to diversify their milk production, which is collected at 3,200 meters above sea level.
